Sausage, Broccolini, and White Bean Ragout

My sister and my brother in law had raved about this dish for months, so I finally decided it was time for me to make it.   It did not disappoint and it took no time to whip together.  Such an easy and hearty weeknight meal.  You could easily serve this over pasta, but we just ate ours in a bowl with bread for dipping- this was the recommended serving way per my sister.  Definitely add some fresh Parmesan before serving, it really sets off the flavors.

Not only was this meal easy but it was cheap too, probably cost $15 for all the ingredients.

– 1 pound hot Italian sausage (ground)

– 2 heads broccolini

– 1 can cannelini beans

– 2 cloves garlic minced

– 1/2 a white onion diced

– 1/8 teaspoon red pepper flakes

– 2 tablespoons olive oil

– grated Parmesan cheese

Pour oil into a large skillet.  Add onion and sausage and cook over high heat several minutes, breaking the sausage into small pieces.   Add the liquid from the can of beans and bring to a boil.

Wash and cut the broccolini tops and stems into about 1 or 1/2 inch pieces.  Add to the pan with garlic, salt and pepper,  and red pepper flakes.  And return to a boil- at this point I added a little water maybe 1/2 the bean can full of water.  Bring to a boil and cover for 4-5 minutes until broccolin is tender but crunchy.

Add the beans and mix well and return to a boil.  Boil about 2-3 minutes to blend flavors.  Season with more salt and pepper if needed.  Sprinkle with Parmesan cheese and a drizzle of olive oil.
