I shared this recipe on my instastories and I had so many requests to post it on here.  It is super easy and very similar to this Veggie Couscous recipe I shared a while back.  When I make couscous I usually just look and see what veggies I have on hand and roll with that.  We grilled burgers this past weekend and I wanted some sort of a salad for the side and made this.  It was a huge hit, even the kids ate it.  I always think couscous is better room temperature.  You can totally make this ahead of time but just pull it out of the fridge about 30 mins before serving and let it sit.  I had lots of questions about the dressing that I used.  I am obsessed with this Garlic Expressions Dressing.  I use it on salads, pastas really anything! I found mine at Harris Teeter in the refrigerated section but I have seen it at Whole Foods in with all the other dressings.   you can also order a 3 pack HERE on Amazon.  I highly recommend it!

EASY COUSCOUS

1 box Israeli Couscous

1 container marinated mozzarella balls halved

2 baby cucumbers diced

2 zucchini, roasted

1 cup halved cherry tomatoes

parsley

Garlic Expressions Dressing

Toss zucchini with olive oil and salt and pepper.  Roast at 350 degrees about 20 minutes.  Cook couscous according to package.  In a large bowl combine couscous, cherry tomatoes, cucumber, zucchini, and mozzarella.  Stir all together.  Drizzle in dressing.  I like to start with a little and let it sit and then add more to make sure the salad doesn’t get soggy.  Sprinkle with parsley if desired.
