BBQ Chicken Mini Cups

I whipped these together for the Super bowl Game on Sunday. I love a good BBQ Chicken pizza so this was kind of my spin on that. I thought about making a BBQ chicken pizza and cutting into squares but I thought the mini cups were a fun idea and bite size. The tangy BBQ Sauce, sweet caramelized onions, sharp cheddar cheese, salty bacon and spicy jalapenos are the perfect combo in my book! I used a spicy BBQ Sauce because I love heat but if you don’t just use a regular BBQ and leave off the jalapenos. You can definitely pre make the mixture ahead of time and then just fill the cups right before you bake them! The leftovers were great to pop in the Sterling’s lunch (he is most definitely my child and loves anything spicy). Enjoy~

B B Q C H I C K E N M I N I C U P S

2 packages phyllo shells (can be found in the freezer section)

1 rotisserie chicken shredded

1/2 red onion diced

1-2 tablespoons diced pickled jalapenos

8 oz sharp cheddar cheese grated

8 pieces bacon cooked and crumbled (could also use bacon bits)

1 cup BBQ Sauce (I used Rufus Teaque’s Touch of heat)

1 jalapeno sliced

cilantro for topping

sautee the onions in olive about 5 minutes until they are slightly brown. In a bowl combine the chicken, red onions, pickled jalapeno, cheddar cheese and BBQ Sauce. Taste and add more bbq sauce if needed.

Place the mini shells on a baking sheet and fill each one with bbq chicken mixture. Top with crumbled bacon and one sliced jalapeno.

Bake at 350 degrees about 10-15 minutes, you just want them cooked through and cheese melty. Remove from oven and sprinkle with cilantro and serve!
