5 Favorite Kale Recipes

I am a huge lover of kale. I feel like I eat it basically everyday or drink it in my green juice. The other day on Q&A’s someone asked me my favorite Kale Salad recipe and it is hands down my Tuscan Kale Salad that I probably make once a week (recipe below). However it got me thinking of other favorite recipes involving kale. So below are 5 recipes I make often using my beloved kale!

EGG + HUMMUS + KALE WRAP |

This has been my go to lunch/breakfast lately. Especially when I fast I will often eat this for my first meal as it is so good and filling too.

Sauté kale in a little olive and set aside. In that same pan sprinkle cheddar cheese right on the pan and then crack two eggs on top of the cheese. Cook and then flip over. It’s ok if the egg yolks break it just makes for a cheesy egg mixture. Take a low carb tortilla and spread on side with hummus. Place the cheesey eggs on this hummus side and lay the tortilla flat in the pan to heat up about 1-2 minutes. Remove from heat add the sautéed kale, hot sauce and I love the Trader Joe’s Italian Bomba hot pepper spread as well.

The original recipe is from the New York Times and I have been making this salad for years. It is simple, easy and delicious! This week I served It over a roasted purple sweet potato. My kids love this salad as well. it makes the perfect side dish for so many recipes.

I crave this soup. It is loaded with so many veggies. It is hearty and filling and just makes you feel good.

This is the perfect Fall Salad! It would make a great Thanksgiving side dish.

MARINATED RAW VEGGIE SALAD |

I make this salad often for lunches. It is filled with so many raw veggies that get even better as they marinate.
