Salmon + Spicy Ginger Peanut Noodles +Asian Green Beans

I am all about easy weeknight meals and this one was not only easy to make but so good. Sterling had two servings so I consider that a huge win! I prepped and cooked the salmon very basically so if we had leftovers we could make into salmon cakes or eat over salad! The real flavor is in the noodles and green beans. I am beyond obsessed with kimchi, I eat it everyday, it is so good for your gut health. It is the perfect addition to this meal. I like to mix two of my favorites but any kimchi or pickled veggies would work! I recommend buying really good quality salmon, I prefer Alaskan salmon and darker in color. S A L M O N + S P I C Y S O B A N O O D L E S + A S I A N G R E E N B E A N S

1-1.5 pounds of salmon for appprox 4 people

Green beans

1 package soba noodles

3 tablespoons peanut butter

3 tablespoons soy sauce + 2 tablespoons for green beans

5 tablespoons rice wine vinegar

3 teaspoons sesame oil

1 large garlic clove minced

1 tablespoon fresh grated ginger

2 teaspoons brown sugar

1/2 teaspoon red pepper flakes

juice of 1 lime

1 teaspoon sriracha hot sauce

FOR THE SALMON | Place salmon on a baking sheet skin side down. Drizzle with olive oil. Season with salt and pepper. Bake at 350 degrees about 20-25 minutes depending on the size of the salmon. Remove and let sit aside.

FOR THE SOBA NOODLES | Cook noodles according to package. Drain and rinse after cooking with cold water and set aside.

FOR THE NOODLE DRESSING | Whisk peanut butter, rice wine vinegar, soy sauce, lime juice, garlic, ginger, sesame oil, red pepper flakes, hot sauce, brown sugar. Whisk all together until creamy!

Pour this dressing over the noodles and toss well.

FOR THE GREEN BEANS | bring a pot of water to a boil. Drop the green beans in and flash boil for 3 minutes, drain and remove. In a skillet heat about 2 tablespoons olive oil and drop blanched green beans in. Add in 2 tablespoons soy sauce and sauté about 5-7 minutes. Sprinkle with Everything but the Bagel Seasoning.

Place noodles in a bowl or plate and top with salmon and green beans. Add kimchi and hot sauce if desired!
