Let’s make mini tomato pies. A bite size version of our beloved Southern favorite. When I saw these mini pie shells at the grocery store I knew I needed them! These come together in minutes and make the cutest appetizer. Or serve with a simple green salad as a meal! Enjoy!
M I N I T O M A T O P I E S
1 package mini pie shells
1/2 white onion diced
1 cup shredded fresh basil
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
1/4 cup mayo
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon hot sauce
Slice the tomatoes and lay on paper towels for about 30 minutes to absorb extra water.
In a bowl mix both cheeses, mayo, salt and pepper and hot sauce.
Press mini pie shells in a muffin baking dish.
Add a layer of the cheese mixture, diced onions, tomatoes and Basil. Top with more cheese mixture and a tomato slice.
Bake at 350 degrees 30-40 minutes
Sprinkle with fresh basil and enjoy
