I wanted to share a few super easy meals I have made lately.
L O A D E D R A W V E G G I E S A L A D | This is kind of a spin on my marinated veggie salad, super similar and any veggies will work. I was craving a big bowl of fresh veggies and this hit the spot!
1 cup shredded kale massaged with olive oil + 1 small zucchini, cherry tomatoes, diced red onion, marinated artichoke hearts, chopped broccoli, sliced baby bell peppers, and pine nuts. Dressing is olive oil, juice of one Leon, and champagne vinegar + salt and pepper. Toss all the veggies with the dressing. I like to use my hands to kind fo massage it all together. I topped mine with a scoop of hummus and pepperoncinis.
C H I C K E N S A U S A G E R I C E B O W L S
These bowls are so incredibly easy. Just roast any veggies you have on hand- I used broccoli, squash, zucchini, and tomatoes. Then sauté chicken sausage, I used Gilbert’s Caprese chicken sausage. Serve both over rice or risotto. I used Right Rice, a rice made of veggies that can be found at Whole Foods and Harris Teeter.
C R E A M Y T O.M A T O S O U P | This recipe is from Molly Baz’s Cookbook, Cook This, which is a new favorite of mine! This tomato soup was so incredibly easy to make and possibly one of the best tomato soups I have made. The addition of cheddar cheese and dill on top takes this soup to the next level.
J A Z Z E D U P R A M E N | We have been loving this Ramen in a cup. I cook the ramen according to the directions and then I add in soy sauce, kale Kimchi (any kimchi would work, the fermented veggies are so good in the soup), Sriracha and top with a hard boiled egg. Chopped green onions or chives are also great on top as well. Ramen made easy!
