Over the Summer we stopped and ate at a little restaurant in Litchfield called The Chive Blossom. We had a crab salad there that I have been dreaming about ever since! This salad is really simple and full of so many flavors, the ingredients really shine. Everything is very lightly tossed with olive oil, fresh lemon juice, salt and pepper for the ultimate light and refreshing salad.
Side note- We always buy our jumbo lump carb meat at Costco, they have the best price!
C H O P P E D L U M P C R A B S A L A D
Shredded Spinach and Romaine lettuce
1 cup halved cherry tomatoes
1/4 cup capers
3-4 hearts of palm sliced
1 small orange bell pepper diced
1 small jar marinated artichoke hearts, chopped
1 cup (or more) jumbo lump crab meat
juice of 1 lemon
olive oil
In a bowl arrange the spinach, romaine, cherry tomatoes, capers, hearts of palm, orange bell pepper and marinated artichoke hearts.
In a small bowl gently fork the crab meat making sure there are no shell. Juice with half a lemon and season with salt and pepper and stir. Add this mixture to the salad.
Drizzle olive oil over all and the juice of the other half of the lemon. Toss all together and season again with salt and pepper to your taste!
