It’s week 2 of my Easy Weeknight Meals Series and this week we are making Crack Chicken Soup! The beauty of this soup is the crockpot does all the work for you! Simply toss in all your ingredients and let it simmer away! The flavors are so delicious and it’s a one pot meal so winning all around!
CRACK CHICKEN SOUP
2lbs boneless skinless chicken breasts (I used 3 large ones)
I teaspoon salt
1 teaspoon pepper
1 tablespoon dried chives
1 tablespoon dried dill
1 teaspoon dried parsley
1 teaspoon garlic powder
1 teaspoon onion powder
8 cups chicken broth
8 oz cream cheese
4 slices crumbled cooked bacon
2 cups shredded sharp cheddar cheese
1 head kale de stemmed and shredded
Optional 2 tablespoons hot sauce
Green onions, shredded cheese and bacon for garnish
Place chicken breasts in crockpot and season with salt, pepper, chives, dill, parsley, garlic powder and onion powder. Add in broth, cubed cream cheese and bacon. Cook on low 4-5 hours. Shred the chicken and stir in kale and shredded cheddar cheese. I also added in a few dashes of hot sauce, Simmer another 15-30 minutes and enjoy! Serve in a bowl and top with green onions, more cheddar cheese and bacon.
