My sister made this salad on beach vacation and it was a huge hit! I had a few of you guys ask me for the recipe so I figured I would post here to have on file! The key is to make this the day before and let the flavors set in. This is a very Southern Salad. Don’t let the mayo gross you out, it grossed me out but once the salad was all mixed together the flavor was just delicious. Enjoy!
L A Y E R E D P E A S A L A D
1 head iceberg lettuce
1/2 red onion chopped
1 green bell pepper diced
1 box frozen green peas, cooked slightly and cooled
8oz shredded sharp cheddar cheese
8-10 slices bacon cooked and crumbled
15 oz Mayo
1 tablespoon sugar
Shred the lettuce and place in a large bowl. Next layer the onion, then the green bell pepper. put about 3/4 the cooled and drained peas ( or use them all). Now spread mayo on top like icing covering all edges. Sprinkle sugar over the top. Add Cheddar Cheese. Top with crumbled bacon. Seal with aluminum foil and refrigerate. This is best made one day ahead.
