The Best Homemade Pimento Cheese
Homemade Pimento Cheese is so easy to make and honestly so much better than store-bought! I love making a batch to have on hand for snacks, appetizers, kids lunches etc! A few things that I think help to make a superior pimento cheese.
Always grate your cheese yourself this makes a huge difference vs pre shredded. Good quality cheese makes a difference, flavor wise my favorites are @cabotcreamery or @tillamook. Don’t skip the hot sauce, it gives it really good flavor but doesn’t make it spicy. Add in some fresh chives. They really brighten it up. This saves well for several days in the fridge and I think it gets better the longer it sits.

PIMENTO CHEESE RECIPE
1 block sharp cheddar cheese (8oz)
1 block white sharp cheddar cheese
6oz pimentos drained
3/4 cup mayo
1 tablespoon hot sauce
2 tablespoons fresh chopped chives
1 teaspoon salt
1/2 teaspoon pepper
1/8 teaspoon cayenne
1/4 teaspoon garlic powder
Grate the cheese and place in a bowl. Add all other ingredients and mix well. Add more salt and pepper if needed.
