I finally made the viral Green Goddess Cabbage Salad by @bakedbymelissa. I’m not sure what took me so long because it is quite possibly life changing. If you loved the 6 ingredient Greek Salad I shared you are going to be equally obsessed with this recipe! It does require a little chopping and a food processor or blender but trust me it’s worth it. It’s incredible alone but also fabulous with a chip or pilled on sourdough bread with Cottage Cheese! Enjoy!
GREEN GODDESS CABBAGE SALAD
1 head green cabbage, shredded and then diced
3-4 baby cucumbers diced
1 bunch scallions sliced white and green parts
1 bunch chives Chopped
DRESSING
1/4 cup olive oil
Juice of 2 lemons
2 tablespoons rice wine vinegar
1 cup fresh basil
1 cup spinach
2 garlic cloves
1 small shallot
1/4 cup nuts – I used unsalted cashews
1/3 nutritional yeast
1 teaspoon sea salt
Place cabbage, cucumbers, chives, and green onions in a bowl.
In a food processor or blender add dressing ingredients – olive oil, lemon juice, rice wine vinegar, garlic, shallot, spinach, basil, nuts, nutritional yeast, and salt. Blend until smooth.
Pour over salad and mix well
