Shaved Zucchini + Squash Summer Salad

Meet my new favorite Summer Salad I have been making on repeat. I had a similar version of this salad a few months ago at Chez Nous and I have been wanting to recreate it! You won’t believe how simple the ingredients are yet how complex and incredible the flavor is. You don’t even cook the squash and zucchini, they are raw so this takes minutes to whip together. The fresh herbs and lemon juice really elevate this salad and make it so bright and flavorful. I was thrilled to be able to use all herbs from my own garden! Even Frances Moon and Sterling loved this which shocked me as they are not big salad eaters. This is the perfect Summer side dish with grilled meat or fish! Enjoy!

S H A V E D S Q U A S H + Z U C C H I N I S U M M E R S A L A D

2 yellow squash

2 zucchini

olive oil

2 tablespoons chopped fresh basil

2 tablespoons chopped fresh mint

2 tablespoons chopped fresh chives

1/2 cup shaved Parmesan Cheese

1/3 cup pine nuts

1 lemon juiced

Using a vegetable peeler, peel the zucchini and squash into strips.

In a toaster oven lightly toast the pine nuts- 350 degrees for about 5-7 minutes you don’t want them to burn so watch them.

Drizzle olive oil over the shaved squash and zucchini and season with salt and pepper

Juice an entire lemon over the top (you may want to add more lemon depending on your taste and how juicy the lemon is). Then toss the squash and zucchini until coated.

Top with chopped fresh basil, chives, mint, Parmesan Cheese and pine nuts and mix together again. The flavors get better as this sits so ideally let it sit 30 minutes before serving.
