Burrata, you just can’t go wrong with it in any form or fashion. It is so creamy and delicious. I picked up some fresh balls at our Farmer’s Market last weekend. I knew I wanted to make this as an appetizer for Father’s Day. This is such a simple appetizer yet so full of flavor. The marinated tomatoes really give the burrata a nice burst of flavor especially paired with the salty prosciutto! I added in some pickled okra and olives, that is not necessary but they paired nicely with the burrata and gave the tray some color! This literally takes less than 10 minutes to prepare, an easy and delicious app that is a crowd pleaser!
B U R R A T A + M A R I N A T E D T O M A T O E S
2 balls burrata
1 pint cherry tomatoes halved
1 garlic clove
1 tablespoon champagne vinegar
1/2 teaspoon red pepper flakes
1 teaspoon fresh chives chopped
1 teaspoon parsley
1 teaspoon fresh basil
1/2 teaspoon salt
1/2 teaspoon pepper
3 tablespoons olive oil
prosciutto
crackers
pickled okra and olives optional
In a bowl place halved cherry tomatoes. Add olive oil, garlic, red pepper flakes, parsley, chives, basil, salt and pepper and champagne vinegar. Toss all together and let sit 30 minuets to an hour to really marinate the tomatoes.
On a platter kind of split open the burrata balls and pour tomato mixture over top. Nestle in prosciutto slices around the burrata. Add crackers, pickled okra, olives and any other additions you like!
