If you follow me on instagram you saw I made these last weekend for my parents. My dad helped me do a lot of work around the house and I wanted to thank him with a homemade meal. Mom had mentioned a similar recipe she made awhile back so I set off to create something similar. These potato stacks were a huge hit, everyone went back for seconds and not a single one was left. I kind of just made the recipe up so my measurements are not exact, add more cheese or heavy cream if you need to. Enjoy!
C H E E S Y P O T A T O S T A C K S
2 russet potatoes peeled and sliced thinly
1.5 cups heavy cream
4 tablespoons butter
2 garlic cloves minced
1 8oz block gruyere shredded
1 cup shredded parmesan cheese
fresh parsley for topping (optional)
Using a mandoline ( I love this one) thinly slice your peeled potatoes and place in a bowl. Season with salt and pepper and add about 1/2 cup the heavy cream just to lightly coat them. I kind of stirred them to make sure each piece was wet. In a bowl whisk one cup heavy cream with melted butter and minced garlic. Spray your muffin tin really well before layering- I did and mine still stuck a little at the top. Start to layer potatoes. I layered about 4 potato slices, then top with a spoonful of the heavy cream butter mixture and shredded cheese. Keep doing layers like this until you reach the top. I probably did about 4-5 layers in each muffin cup. Bake at 350 degrees about 35-40 mins or until cheese is bubbly. Top with parsley if desired.
