Every now and then I crave a casserole. This is not something I make on a regular basis but whenever I do I am reminded what a tasty one dish meal it is. My kids love a casserole too, when I made this last night they said why don’t you make this more often. This is a spin on a chicken and broccoli casserole- however it has no cream of anything soup in it. I also added in veggies that I had on hand in my fridge, so while this may not be the healthiest it is filled with lots of veggies and doesn’t have anything majorly processed in it. I used the microwave bags of rice to save time and dishes, however cook your rice however you prefer. I made this with wild rice but brown rice or white rice would be great too. I loved the addition of kale and artichokes. Add in lots of cheddar cheese and you have a winning meal!

2 chicken breasts cooked and shredded (or use a Rotisserie Chicken)
2 microwave bags of Wild Rice (or any rice)
1 head kale, de-stemmed and shredded
2 heads broccolini or broccoli cut into small pieces
1- 2 tablespoons olive oil
1/2 red or white onion diced
2 garlic cloves minced
1 small jar marinated artichokes, drained and chopped
1/4 cup chicken broth
1/2 teaspoon red pepper flakes
1/4 cup heavy cream
1/3 cup sour cream
1/4 cup mayo
8 oz shredded cheddar cheese
8 oz shredded white cheddar cheese
Everything But the Bagel Seasoning
Boil chicken 20-25 minutes, let cool then shred meat or use a Rotisserie Chicken
In a saute pan add in a little olive oil and add diced onions and minced garlic. Sauce about 5 minutes. Add in shredded kale and chicken broth. Cook 3-5 minutes until kale wilts. Add in broccolini pieces and red pepper flakes. Cook another 5 minutes just until broccolini is slightly cooked.
Microwave wild rice packages and then empty into a large bowl. Add in shredded chicken, kale +broccolini mixture, artichokes, shredded cheese, sour cream, heavy cream and mayo. Mix all together. Season generously with salt and pepper.
Pour into a baking dish and spread evenly. Sprinkle the top with Everything But the Bagel Seasoning. Bake 30 minutes at 350 degrees or until cheese is bubbly. We like to serve ours topped with hot sauce.
