One of my “Ins” for 2025 was Fancy Cottage Cheese and a lot of you asked me how to make that so here we are! This is my version of Fancy Cottage Cheese! It is hands down one of my most favorite lunches and filled with protein! Now you can make Fancy Cottage Cheese any way you want but the key is to start with really good cottage cheese and I personally love @good_culture it’s incredible.
Next you have to season the cottage cheese. I’m using @jenniferfisherkitchen Universal Sea Salt. I am a huge fan of this as it has added herbs in but any flakey salt would work. Then lots of black pepper and red pepper flakes. Then I top with Chili Crisp I’m using @mrbingnyc spicy chili crisp.
Next the veggies. I love the crisp chopped veggies with the creamy cottage cheese it’s the perfect combo. Here I used :
Cherry Tomatoes
Cucumber
Red onion
Orange bell pepper
Green olives
Pepperoncinis
To the veggies add a drizzle of the pepperoncini juice that is key. Then a drizzle of good olive oil, a splash of red wine vinegar and sea salt. Mix together.
Finally a jammy egg and I just learned the fail proof way to make one. Leave eggs at room temperature. Bring water to a boil. Add eggs in set a timer for 7 minutes. Have an ice bath ready. After 7 minutes place in ice bath for 2 minutes. Then peel and enjoy the most perfect jammy egg.
To the cottage cheese add your chopped veggies and nestle in the jammy eggs. Eat with a fork or your favorite cracker and enjoy!!
