I have been working really hard the last two weeks to eat fairly clean avoiding processed foods, carbs, and sugars when I can. I don’t do this all the time but try to maybe 80 percent of the time. It has made me be a little more innovative in order to think up tasty meal ideas. I made these lettuce wraps for lunch and they were so good. The quinoa and chicken help to bulk up the wraps and fill you. This would be great with feta sprinkled on top too! I had leftovers so I mixed the quinoa, chicken and greek salad together and it made for a great salad.

1 cup cooked quinoa
1 cup shredded chicken (I used a Rotisserie one)
2 teaspoons Everything but the Bagel Seasoning (this is from Trader Joe’s and life changing)
Juice of one lemon
1 small baby cucumber diced
handful cherry tomatoes diced
1/4 red onion diced
handful kalamata olives halved
chopped parsley (optional)
1 tablespoon red wine vinegar
tzatziki sauce
bibb or romaine lettuce
In a bowl combine the quinoa, chicken, Everything but the Bagel Seasoning, olive oil, and lemon juice. Toss all together.
In another bowl combine the diced cherry tomatoes, cucumber, red onion, kalamata olives, and red wine vinegar. Toss together.
Lay Bibb lettuce on a plate. Place one scoop of the chicken quinoa mix and one scoop of the tomato/cucumber mix on each piece of lettuce. Top with with a scoop of tzatziki and fresh parsley.
