I have had an abundance of corn in my local Farmer’s Market bag I get delivered weekly. I have several corn salads I like to make but this one may just be my new favorite. It is loaded with fresh veggies and lots of herbs to give it so much flavor! The feta adds the perfect amount of salty creaminess to the salad. This will be on repeat this Summer. Enjoy!

4 ears corn, kernels sliced off
2 small Persian cucumbers diced
2 carrots sliced thinly
2 banana peppers sliced thinly
4 green onions sliced
handful cherry tomatoes
8 radishes sliced
2 jalapeños seeded and diced
4 oz crumbled feta cheese
2 tablespoon chopped fresh chives
2 tablespoons chopped fresh mint
2 tablespoons chopped parsley
D R E S S I N G
juice of 1 lime
1/4 cup olive oil
1/4 cup red wine vinegar
salt and pepper
In a bowl combine corn, veggies, feta and herbs and lightly toss. Shake together dressing. Pour dressing over salad and stir. You may not need all the dressing, just taste and add more as needed.
