Hummus Pasta Salad

I had been wanting to try this pasta hummus trend for a while and finally tested it out this weekend. It’s so easy to whip together and if you like hummus and pasta then this is your dish. I did decide the sauce needed more than just the hummus, I felt like it needed more flavor. So I added in tahini and fresh lemon juice and that helped immensely! Add any veggies or cheese you like! I also thought the feta and pistachios really rounded out the salad nicely!

Hummus Pasta Salad ingredients

HUMMUS PASTA SALAD

Ingredients

1 container hummus (I used Trader Joe’s Chili Onion crunch hummus)
1 bag pasta (smaller noodles work best here)
1 large bunch broccolini chopped
1.5 cups spinach
2-3 tablespoons Trader Joe’s Chili Garlic Crunch
2 tablespoons tahini
Juice of lemon
1 cup crumbled feta cheese
1/3 cup chopped pistachios
Olive oil for drizzling and salt and pepper

Instructions

Cook pasta according to package. Save 1/3 cup the pasta water for later. Drain then set aside.

In a skillet sauté the broccolini and spinach in a little olive oil with salt and pepper. Once slightly wilted add in a 2-3 tablespoons Chili Garlic Crunch. Stir and then cook a few more minutes and set aside.

In a bowl add pasta, sautéed spinach and broccolini, container of hummus, feta cheese, and pistachios. Add reserved pasta water, tahini and lemon juice, and 1 teaspoon salt and 1 teaspoon pepper. Toss all together. I also added more olive oil and salt at the end for extra flavor and consistency. This is best served room temperature!
