I eat salads all year long but Summer just screams salads to me. They are the perfect light and refreshing meal! The base of this salad is couscous which I always have on hand but you could easily sub quinoa if you prefer. I think what makes this salad so vibrant is all the fresh herbs and the lemon vinaigrette. The radishes give it a nice bitterness combined with the salty feta and cool cucumbers! It would make a great side item for a Summer cookout or BBQ! Enjoy!

1 cup uncooked couscous
1/2 English cucumber thinly sliced
1 bunch radishes sliced thinly
4 oz crumbled feta
3 green onions sliced
3 tablespoons chopped fresh mint
3 tablespoons chopped fresh dill
3 tablespoons chopped fresh parsley
1/4 cup olive oil
juice of 2 lemons
1 garlic clove minced
1 tablespoon champagne vinegar
Cook couscous according to box. Once slightly cooled place in a bowl. Add in cucumbers, radishes, green onions, feta, dill, mint and parsley.
In a shaker combine olive oil, lemon juice, garlic, champagne vinegar and salt and pepper. Shake well. Pour over salad and toss together!
