I try and eat fairly clean during the week so I can indulge a bit on the weekends. I like to meal prep lunches to save time. This week I made a raw marinated veggie salad. This is such a great way to eat so many different veggies. This is loosely based off a salad at Earthfare I love. All the veggies are raw so you are getting maximum nutrients. I made my own Vinaigrette but if you didn’t want to make your own this would be great with Garlic Expressions. This will save for several days in the fridge. Enjoy!
R A W M A R I N A T E D V E G G I E S A L A D
1 head broccoli cut into small pieces
1 head cauliflower cut into small pieces
2 small zucchini, sliced in half and sliced into small slices
2 small yellow squash, sliced in half and sliced into small slices
1 orange bell pepper sliced thinly
1/2 red onion sliced thinly
1 cup cherry tomatoes, halved
handful shredded kale
handful of pinenuts
1/4 cup olive oil
juice of 1 lemon
1 garlic clove minced
3 tablespoons raw unfiltered apple cider vinegar
1 tablespoon dijon mustard
salt and pepper to taste
Combine all the veggies and pine nuts in a bowl. In a jar combine the olive oil, lemon juice, garlic, apple cider vinegar, dijon mustard, salt and pepper and shake well. Toss dressing over veggies- you may not need all the dressing. I usually toss with half let it sit and then see if I need to add more which is usually yes:)
