I often get requests for links to our dinners that I share on instastories so today I wanted to share some recent dinners and recipes. I tried to include pictures of the kid’s plates as well if I took them.
We made this Caprese Quinoa Bake for meatless Monday this week and it was so good!

We have made this Asian Salmon twice now and love it, such great flavors.

The Asian Salmon again served with Trader Joe’s cauliflower rice stir fry + Roasted Broccoli + Avocado

This Goop Detox Salad was so light and fresh. I will be making it on repeat, such a great clean salad.

I make these Salmon Cakes often, the kids love them. I serve them with store bought Chipotle Mayo and it is so yummy.
Salmon Cakes | Basic Salad | Roasted Cauliflower and Chickpeas

We do fried eggs often for dinner. This is such a quick and easy dinner.
Fried Egg | Tuscan Kale Salad | Roasted Sweet Potatoes and Broccoli | Avocado | Cooked Beets

As y’all know Green Goddess Chicken is on repeat round here. I am posting the recipe again because I keep getting so many requests.
Take chicken tenderloins and trim them of extra fat or you can take chicken breasts and cut them into smaller pieces. Layer in a baking dish. Sprinkle with salt and pepper generously. Pour 1/4-1/2 bottle of Tessamae’s Green Goddess Dressing (this can be found at Whole Foods, Earthfare and Amazon) over the top. Bake about 25-30 minutes at 350 degrees. Remove from oven and sprinkle with grated Parmesan and bake another 5 minutes.

I am hooked on these salmon cakes. I can’t tell you how many times I’ve made them the last few weeks, and they’re great as leftovers.
