Sausage, Sun Dried Tomato and Brie Breakfast Casserole

We had some friends stay with us over New Years and I always love to have an easy breakfast to feed guests. This casserole could not be easier to whip together and everyone loved it. Plus the kids and I had leftovers for a few days. The sun dried tomatoes and brie really give the casserole amazing flavors. You can easily make this ahead of time and just reheat when ready to serve.

S A U S A G E + S U N D R I E D T O M A T O + B R I E B R E A K F A S T

C A S S E R O L E

1 pound ground sausage (hot or regular)

1/2 jar sliced sun dried tomatoes

1/2 white onion diced

1 cup fresh spinach

8 eggs

1 cup milk

1.5 cups white cheddar cheese

4 oz brie cut into cubes

In a skillet sautee onion with a little olive oil. Add in sausage and cook until browned. Pat off grease with a paper towel. Stir in spinach until wilted and then stir in sun dried tomatoes.

In a mixing bowl mix the 8 eggs with milk and salt and pepper. Stir in cheddar cheese.

In a baking dish pour the sausage, sun-dried tomato, and spinach mix and spread evenly. Take the brie cubes and just scatter over this mixture. Pour the egg mixture over it all.

Bake at 350 degrees 30-40 minutes until bubbly.
