I made this salad last week to go with our tomato pie and had lots of requests to share it. It is a similar version to my kale and brussels salad. I don’t know what it is but I love a shaved brussels salad. The key if having good knives and I swear by these Global ones. This salad is best the day you make it but can be saved for a day or two. If you don’t like pine nuts you can sub sliced almonds. Enjoy!

S H A V E D B R U S S E L S S P R O U T S S A L A D
1 bag brussels sprouts thinly sliced
pine nuts
Parmesan Cheese
1/4 cup olive oil
1 tablespoon dijon
2 tablespoons apple cider vinegar
juice of one lemon
salt and pepper
Place the Brussels, pine nuts and Parmesan cheese in a large bowl.
In a shaker combine olive oil, lemon juice, dijon, apple cider vinegar and salt and pepper. Drizzle over salad.
Salad Dressing Shaker– if you don’t have this you need it. I use it so often because I usually make homemade dressing.

Global Knives– I swear by these, hands down the best knives ever. They ate an investment but if you like to cook totally worth it. They shred everything so finely.

Love this salad…just made it ahead for lunch tomorrow. I often add grilled chicken to make it a full meal.
