This salad was inspired by a salad I frequently pick up at Earthfare. It is full of so many veggies, super healthy and not to mention tasty as well. All the veggies are basically raw so the salad has a great crunch to it. The tangy Apple cider vinegar dressing and salty sunflower seeds are the perfect addition to bind it all together. Because everything is raw this salad will save well in the fridge for several days and not get soggy. You could add grilled chicken or shrimp to make this a complete Summer meal:) Enjoy!
S U P E R F O O D S A L A D
1- 2 cups baby kale or regular kale, chopped
1 pint halved cherry tomatoes
1 zucchini sliced
1 squash sliced
1 small head broccoli, chopped
1/2 head cauliflower, chopped
1/4 cup roasted and salted sunflower seeds
1/2 red onion diced
D R E S S I N G
1/4 cup olive oil
5 tablespoons apple cider vinegar
1 teaspoon dijon mustard
1 teaspoon honey
1 garlic clove minced
salt and pepper
whisk all together.
In a small skillet add olive oil and sautee the squash and zucchini about 5 minutes, until just slightly cooked. You can also toss them in raw as well if desired. Add other ingredients to a large bowl and toss all together. Pour dressing over the top and toss again. This will save well in the fridge for several days.

I wanted to also share this bathing suit from my post yesterday. Mine arrived in the mail yesterday and let’s just say I am smitten. The kids and I spend most days at the pool in the Summer so I like to have some cute one piece options. The suit runs true to bathing suit sizing. I am typically a 6 in one pieces and that is what size I am wearing here. The suit is fully padded + sucks you in for a flattering fit. I love the ruffle sleeve detail too!
