I made this recipe last week for a neighborhood get together and it was a huge hit. It honestly came together as a way of me using up a few things I had on hand. I originally thought about using goat cheese which you totally could do but I had a round of St Andre cheese already so I used that. I loved the creamy aspect of the brie like cheese. I picked up pomegranate seeds and mircogreens because I felt like it needed something else. Plus how gorgeous would this app be for the holidays with the red and green?? I buy the microgreens at Whole Foods and love them on my avocado toast but if you can’t find them parsley would work just fine.

3 Sweet Potatoes peeled and sliced into 1 inch round slices
Sliced Brie ( I used St Andre)
Prosciutto
Pomegranate seeds
Arugula microgreens
Toss the sweet potatoes with olive oil, salt and pepper. Layer on a baking sheet. Bake at 375 degrees about 30 minutes, you want the potatoes to slightly brown on the edges. Flip them once about halfway through. Remove from oven and let cool slightly. Lay the sweet potatoes on a serving platter and top with a slice of brie and a prosciutto. Sprinkle pomegranate seeds and microgreens over the top.

I also wanted to share my latest Amazon find, this super cute Peplum tee. It is only $18 and I love it. The fabric is nice and thick it does not feel cheap at all and it has a slight pattern on it that I really like, gives it some texture. I am wearing the blush color but it comes in several other colors. I honestly may buy another one. I am wearing a size medium.
