I love any sort of pasta salad but this macaroni salad takes the cake. It is hands down the best macaroni salad. I love the saltiness of the capers paired with the crunchy celery, tangy dijon mustard, lots of herbs and semi sweet bread and butter pickles. This is the perfect side for any grilled meat! Enjoy!

adapted via New York Times
1 box elbow pasta or spirals
2/3 cup minced bread and butter pickles
2 large celery stalks
4 scallions
2/3 cup mayo
3/4 tablespoons buttermilk or regular milk
1/3 cup chopped parsley
1/4 cup chopped dill
1/4 cup drained capers, plus 3 tablespoons brine
4 teaspoons dijon
juice of 1 large lemon
1 teaspoon sugar
In a bowl combine chopped pickles, capers, caper juice, celery, scallions, dill, parsley, dijon, lemon juice, sugar, mayo, and milk. Stir all together.
Cook pasta according to package. Let cool slightly then mix with dressing herb mixture. Season with salt and pepper as needed.
This looks SO GOOD! Def putting this on my list to try next week!
Did you use a Mac and cheese premade box kit or just a plain box of elbow macaroni.
