Frances Moon had her first dance rehearsal last night. She was so excited before we went and then totally freaked out right before she had to get on stage- hoping the day of the recital she isn’t as scared!

The kids have had no camps or plans this week so we have hit up the pool most days! My friend Ashley and her kids joined us yesterday.

I just started reading this new book, Queen of Hearts. My sister’s book club is reading it and she mentioned it to me. I am really liking it so far, the story is based in Charlotte which is cool! It is a good easy Summer read. I am working on an entire post about book recs coming soon!
Our pool snacks. I had lots of questions about the couscous salad- so here is the recipe, it is so easy and great for the pool or picnic.
Cook couscous according to package. Slice and roast 3 zucchini/squash at 400 degrees. Toss them with olive oil and salt and pepper first. Bake about 20 mins. Let couscous and squash cool then toss together. Add in halved cherry tomatoes, diced red onion, feta cheese, and fresh basil. Toss all with your favorite vinaigrette. I use Garlic Expressions.
If you have not checked out Kairos Greek kitchen in Mount Pleasant it is a must! You basically build your own salad, grain bowl or pita. They have so many delicious toppings.
I found peonies at Trader Joe’s and could not be more excited they are my favorite flower.

I would highly recommend the Ball “complete book of home preserving”. All you need is inexpensive canning set from amazon- tongs, sealer, etc. instead of buying a special pot i use a round cooling rack in the bottom of a regular pot to boil the jars.
