We have finally had some cooler weather so I am all about some soups. This one is super easy and so yummy!
TORTELLINI SOUP
1 package cheese tortellini
1 pound hot Italian sausage
1 14 oz can diced tomatoes
1 package dried Ranch dip
8 cups chicken stock
2 zucchinis diced
2 carrots diced
1 small white onion diced
1 cup fresh spinach
shredded Parmesan cheese
Heat a skillet to medium high heat and sautee onions about 5 minutes. Add in sausage and cook until browned.
In a large dutch oven add sausage, diced tomatoes, chopped carrots, zucchini, and then add in chicken stock. Add ranch packet and bring to a boil. Once boiling add in cheese tortellini and cook about 5-8 minutes. Add in spinach last and stir. Serve with fresh Parmesan Cheese,
