Butter Bean Dip

Ingredients

  • 1 can Butter beans, drained
  • 1 tbsp Dijon mustard
  • 2 tbsp Fresh lemon juice
  • 3 tbsp Onion, chopped
  • 2 tbsp Fresh Parsely or Chives, chopped
  • 1 clove Garlic, chopped
  • 2 tbsp EVOO
  • Salt & Pepper
  • 1 Baguette, sliced

Instructions

  • Mix all ingredients together.
  • This is best when it sits about an hour and at room temperature. 
  • It can be made ahead and refrigerated but pull out and let it come to room temperature before serving.
