- 1 can Butter beans, drained
- 1 tbsp Dijon mustard
- 2 tbsp Fresh lemon juice
- 3 tbsp Onion, chopped
- 2 tbsp Fresh Parsely or Chives, chopped
- 1 clove Garlic, chopped
- 2 tbsp EVOO
- Salt & Pepper
- 1 Baguette, sliced
Mix all ingredients together.
This is best when it sits about an hour and at room temperature.
It can be made ahead and refrigerated but pull out and let it come to room temperature before serving.
