Spicy Peanut Butter Kimchi Noodles

- 1 package Soba Noodles
- 1 cup Peanut Butter
- 3/4 cup Kimchi (plus extra liquid)
- 2 Limes, juiced
- 3 cloves Garlic, minced
- 2 tbsp Ginger, minced
- 1 tbsp Hot Sauce (Sriracha or similar)
- 1 tbsp Sesmae Oil
- 2 tbsp Soy Sauce
- 1 tbsp Rice Wine Vinegar
- Cucumbers + Sesame Seeds for topping (optional)
Cook soba noodles according to the package and drain and rinse.
combine the peanut butter, kimchi, garlic, ginger, lime juice, soy sauce, hot sauce, rice wine vinegar, sesame oil. Add a little of the kimchi liquid if sauce seems too thick.
Taste and season as needed per your palette.
Toss the noodles with the sauce- it makes a lot so you may have extra but we love sauce.
I topped ours with fresh chopped cucumbers and sesame seeds. Would also be great with green onions and cilantro.
