I can’t believe Memorial day weekend is already upon us! Today I wanted to share some great side/salad recipes for any cookouts or parties this weekend.
For some reason that I still can’t figure out this Asparagus Caprese Salad was somehow deleted from my blog. I had 4 posts from that week that just disappeared or were deleted somehow. My apologies to all of you who reached out trying to find it. I wanted to repost it and share 12 other salads that would be great for this weekend.
A S P A R A G U S C A P R E S E S A L A D
1 bunch asparagus, washed and ends trimmed
1 pint cherry tomatoes, halved
1 container small mozzarella balls, halved
pesto
fresh basil
Preheat oven to 350 degrees. Wash asparagus, trim ends, then place on a baking sheet. Drizzle with olive oil and salt and pepper. Roast about 15 minutes. Meanwhile in a large bowl combine, halved cherry tomatoes, halved mozzarella balls and about 1 cup of pesto and mix all together. Add in about 2 tablespoons fresh sliced basil. Place cooked asparagus on a plate and top with Caprese salad.
