Summer Corn Salad + Open Door Shop

May 21, 2014

I love a fresh corn salad, there is nothing better than fresh off the cob corn.  Canned and frozen corn just don’t compare.  I made this recipe up about two years ago and make it frequently come the Summer months.  You can always add any veggies you like and just use corn as the main base.  All farm fresh ingredients and good for you!  We served this as a side for our braised beef tacos this weekend.  It was a killer combo!  The salad will save but after two days it starts to get soggy, so I recommend making it the day you want to serve it.  The dressing is really simple because I didn’t want it to over power the vibrancy of the veggies.  Add as much or as little dressing as you like.

Enjoy!

– 6 ears of corn, husked

– 1 pint cherry tomatoes cut in halve

– 1-2 cups arugula

– 4 green onions sliced

– 1/2 yellow bell pepper diced

– 1/2 cup crumbled queso fresco cheese or feta

– 1/4 cup olive oil

– 3-4 tablespoons red wine vinegar

– salt and pepper to taste

Take the husks off the corn and wrap in foil.  Bake in oven at 350 degrees about 20-25 mins just to slightly cook corn,  you still want it to have a crunch.  Let cool then slice the corn off.  Mix in bowl with tomatoes, arugula, green onions, and bell pepper.  Whisk together olive oil and red wine vinegar with salt and pepper.  Drizzle over salad and top with cheese.  Best served at room temperature.

I have to point out my new Terrafirma Ceramics serving platter that I just adore.  There is a great shop located here in Charleston and online called Open Door Shop.  Open Door Shop carries this line and so many other great things.

I am kind of obsessed with the Terrafirma line.  Terrafirma products are made entirely by hand using a unique process
that mixes natural stoneware with vibrantly colored and patterned
porcelain surfaces. The pieces are so unique and the patterns are so gorgeous for displaying food.  Best part they are dishwasher safe!  They are great to mix and match with your existing dishes or china!  They really are stunning in person!

Open Door Shop has so many other fabulous things.  I rounded up a few of my favorites.  This is a great place to buy wedding, hostess, or birthday gifts!  They do beautiful gift wrapping too.  The girls were kind enough to offer my readers a discount of 20% off through the weekend.  Use code DBDD20 at checkout to get 20% off anything on the site.  You can shop the whole site HERE.  Locals they are in the process of setting up a store here on Meeting Street, if you want to stop in you can email them at info@opendoorshop.com to see what times they are open!
Happy Shopping!

I made your salad a few days ago and it was delicious! I used Trader Joe's crumbled feta with Mediterranean herbs as my cheese and it added some good flavors!!
