
Welcome back to my series Awesome Appetizers. Today we are making a spin on my Marinated Cheese recipe and making Marinated Charcuterie I was inspired by @grilledcheesesocial Jar-Chuterie recipe! You can totally use any meats or cheeses you love! You can serve this right after you make it, or store in jars 1-2 days before serving. If you store it in the fridge I would let it come to room temperature before serving.
MARINATED CHARCUTERIE
Sliced Peppered salami
Sliced Genoa Salami
Diced Manchego
Diced Gruyère
1/2 a jar baby gherkins drained
1 bag spicy pitted olives
1 cup sliced Sun-dried Tomatoes
2 tablespoons parsley
3 tablespoons good olive oil (I used @kosterina )
2 tablespoons champagne vinegar
Juice of 1/2 a lemon
1 teaspoon red pepper flakes
1 teaspoon Italian Seasoning
1 teaspoon coarse salt
Dice the salami and cheese about the same size. Place in a bowl and add the sun dried tomatoes, pickles, olives and parsley.
Mix the olive oil, lemon juice, vinegar, red pepper flakes, Italian seasoning, and salt. Drizzle over cheese and meat and toss all together. Serve immediately or place in jars and store in the fridge til ready to serve.
