Roasted Veggie Couscous + $18 Tee on Repeat

I am back with another yummy Summer salad.  I shared this on my instasories this week and had lots of requests for the recipe.  This is a great way to use up summer veggies. I love roasting the veggies because it gives them so much flavor.  You could use any combo of veggies you want, I just used some I had leftover from the Farmer’s market.  This is a light pasta and not too filling and perfect for the Summer. This makes a great side dish when entertaining or just a really tasty lunch!  As with any pasta/grain salads I think they are best served room temperature.  Enjoy!

R O A S T E D   V E G G I E  C O U S C O U S

1 box Israeli couscous (I use the Trader Joes kind)

2 small zucchini sliced in half and then sliced in half moons

2 small squash sliced in half and then sliced in half moons

1 pint cherry tomatoes halved

2 ears corn

4 oz crumbled feta

chopped basil and parsley

1/4 cup olive oil

2- 3 tablespoons champagne or red wine vinegar

juice of one lemon

salt and pepper

 

Cook couscous according to box.  Toss the zucchini, squash, and tomatoes with olive oil and spread in a flat layer on a baking sheet.  Remove the husk from the corn and wrap it in foil.  Roast veggies at 350 degrees about 25-30 minutes.  Toss once while cooking.  Place the corn in the oven at the same time as the veggies and let it cook on rack.  Remove all from oven.  Let corn cool slightly and then chop off kernels.  In a large bowl add cooked couscous, veggies, and herbs.

In a small bowl whisk together olive oil, champagne or red wine vinegar, lemon juice and salt and pepper.  Pour this mixture over veggies and couscous and toss all together.  Stir in feta last and enjoy!

I wanted to share my outfit from yesterday as well.  I have actually worn this 3 times the past week:) This stripe tee was one of my Nordstrom anniversary sale purchases.  It comes in 5 colors and is such a great basic tee.  I am wearing a size small.  I love the length and the material- it is light weight and so soft.  I remember this one sold out last year in many sizes so I was excited to get one this year!

    I just made the Roasted Veggie Couscous for dinner tonight. Delicious! I didn’t have feta cheese so I used goat cheese instead. I’ll definitely be making this again!
