After I posted this picture on my instastories I got so many requests to share the recipe. Truth be told I love a good pasta salad. This one is great for Summer, light and not too heavy. I served this for our July 4th cookout with bratwursts and potato salad- it was a perfect Summer meal. I buy this pasta (pictured below) at Trader Joes and love it but any pasta would work just fine. I like this one in particular because the noodles are smaller. I used Brianna’s Real French Vinaigrette for the dressing but you could use any sort of Italian or Greek dressing or make your own! Enjoy!
S U M M E R P A S T A S A L A D
1 package pasta (spirals)
1 pint cherry tomatoes halved
2 baby cucumbers diced
1/2 cup toasted pine nuts
1 package large slice pepperoni, sliced into thin strips
1/4 cup sliced green olives
1 cup shredded Parmesan cheese
Briannas French Dressing
Cook pasta according to package. Drain and let cool slightly. Add in all other ingredients and toss together. Drizzle with dressing- I used about 1/2 the bottle at first and then added a little more right before serving. This is best served at room temperature, so if you make it ahead let it sit out about 20 minutes before serving.

Tomorrow is the big day the Nordstrom Anniversary Sale Early Access starts! This sale happens once a year and the deals are usually pretty awesome. I scored some great stuff last year. Tomorrow through the 20st if you are a card holder you can shop the sale early. The sale then opens to the public on the 21st. The sale is usually Fall items (including men, women, kids, home and beauty) and it is great time to buy designer pieces that never go on sale. Just wanted to say thanks for this recipe! I made it over the weekend to take to a cookout at a friend’s house and it was a hit! I was able to get those noodles at my TJ’s and I found a recipe on Epicurious for a french vinaigrette as I didn’t see Brianna’s at my stores. Very delicious! I had forgotten how good a pasta salad is in the summer.
This is so good and my new go to pasta salad recipe!!! I would recommend clarifying the recipe to indicate French “vinaigrette” dressing. And yes, Briannas is delicious!
