Fattoush Dip + Gigi New York Friends and Family Sale

Now that football season is upon us I am all about some apps.  I am quite happy eating only appetizers for my meal, I especially love a good dip.  I made this dip last weekend for Happy Hour with some neighbors and it was a huge hit.  I love a fattoush salad.  It is a Lebanese salad kind of similar to a Greek salad but tossed with fresh pita chips or lavash bread.  Leyla’s on King Street here in Charleston has my favorite Fattoush Salad.  This dip is so fresh and full of so many great flavors.  Plus it is a healthy option when so many apps are full of calories and bad for you.  I made homemade pita chips which I really recommend doing but if you don’t have time store bought work just fine.  Enjoy!

F A T T O U S H  D I P 

adapted via Kale and Caramel

2 cans kidney beans, drained and rinsed

juice of 1 lemon

2 garlic cloves minced

1/4 teaspoon cayenne pepper

1 tablespoon hot sauce

1-2 tablespoons olive oil

salt and pepper

salad topping-

Cherry tomatoes

diced cucumber

sliced radishes

chopped fresh mint

2 scallions sliced

dressing-

1 tablespoon olive

juice of one lemon

1 garlic clove

homemade or store bought pita chips for dipping

 

In a food processor add the 2 cans of drained and rinsed kidney beans, juice of one lemon, cayenne, garlic, and olive oil.  Puree until smooth.  Add more olive oil or water if it seems too thick.  You want it to be the same consistency as hummus.

In a medium bowl toss together the chopped cherry tomatoes, diced cucumber, scallions, sliced radishes, and mint.

In a small bowl whisk together olive oil, lemon juice, garlic and season with salt and pepper.

Layer the kidney bean dip in a bottom of a dish.  Then top with the salad mixture.  Then drizzle with the dressing!

Homemade Pita Chips– cut pita or multigrain flatbread into strips.  Toss with olive oil,  and sprinkle with everything but the bagel seasoning.  Lay on a baking sheet and bake at 350 degrees 10 minutes or until crispy.
