I am always looking for easy weeknight dinners.  This one was a real winner.  I used a rotisserie chicken, because well that is what I always do, I hate dealing with raw chicken.  I added in zucchini so my kids would eat a veggie but you could totally leave that out.  Honestly though I loved the zucchini with the chicken and BBQ sauce, a great combo.  Any BBQ sauce will work but I have been obsessed with the Trader Joes Sriracha and Roasted Garlic BBQ sauce, it is delicious.  I used mini street taco size shells but you could easily make these using regular size tortillas too. Such a great, easy week night meal full of so much flavor! Enjoy!

M I N I  B B Q  C H I C K E N  + Z U C C H I N I   T O S T A D A S

1 rotisserie chicken shredded

1/2 red onion diced

1 large zucchini or 2 small zucchini diced

1.5 cups BBQ sauce

tortilla shells ( I used mini street taco size shells)

shredded sharp white cheddar cheese

cilantro for garnish optional

 

Heat 1/2 tablespoons olive oil in a skillet and add in diced onion and zucchini.  Sautee until tender about 5-7 minutes.

In a medium bowl add in shredded chicken and 1 cup BBQ sauce.  Toss all together.  Add in cooked zucchini/onion mixture. Stir all together

Preheat oven to 350 degrees.  Lay shells on a baking sheet and bake about 3-5 mins flipping once.  Remove from oven and scoop some of the BBQ chicken mix on each shell.  Top with shredded cheddar cheese.  Bake about 10 minutes then broil for cheese to get bubbly and slightly brown.  Remove from oven and drizzle with extra BBQ sauce and cilantro if desired.

I use eye cream both day and night.  Since my skin is dry I like to moisturize under my eyes to prevent my make-up from caking up.  This eye cream helps diminish dark eye circles and puffiness.

Intense Hydrating Mask

This is a great over night mask.   It is super hydrating and makes your skin feel baby soft.  I apply this instead of moisturizer 2 nights a week before bed and sleep with it on.

Gel Cleanser

I love a foaming face wash.  This one lathers really well and gets your make-up off.
