Last night I hosted a few friends and neighbors for a little Halloween get together before we took the kids to Trick or Treat.  I always love an excuse to whip up a few appetizers and sip on wine with friends!  I made these sun-dried tomato basil rolls and they were so tasty!  Such an easy appetizer that can be made ahead of time!  The cream cheese, spinach, Parmesan and sun-dried tomatoes are so yummy together.   These would be perfect for a holiday party because of the red/green color combo!  I think these could also be really great with bacon added in, I may try that next time!  Enjoy!

S U N – D R I E D  T O M A T O  B A S I L  R O L L S

1 8 oz Cream Cheese

1/2 jar sliced sun-dried tomatoes in oil (coarsely chop and set on a paper towel to drain some of the oil before mixing)

2 garlic cloves minced

1 cup frozen chopped spinach thawed and squeezed dry

1 cup shredded Parmesan cheese

Fresh Basil

salt and pepper

sun-dried tomato tortillas (plain flour or whole wheat would also work)

 

Let cream cheese come to room temperature (this makes it easier to mix).  In a large bowl combine the cream cheese, thawed spinach, minced garlic, sun-dried tomatoes, Parmesan cheese, salt and pepper.

Lay the tortillas flat and then spread with a thin layer of the cream cheese mix.  Layer basil leaves on top.  Then roll up.   Slice into about 1 inch pieces.

If you make ahead of time I usually try to keep them rolled up and then just cut right before serving.
