Marinated White Bean Dip + Colleen Rothschild Anniversary Sale

I made this dip over the weekend to take to our neighbors and it was delicious!   Marinating the beans gives them so much flavor.  I served this as a dip but I think it would make a killer salad to serve either grilled chicken or salmon over the top of it!  I find this is best at room temperature.  After I mixed mine I let it sit out for about an hour room temperature.  I served this with a baguette sliced and drizzled with olive oil, but it would also be great with warmed pita bread or naan.  Enjoy!

 M A R I N A T E D   W H I T E   B E A N   D I P

2 cans white beans (drained and rinsed)

2 tablespoons fresh basil

2 tablespoons parsley

2 tablespoons cilantro

2 minced garlic cloves

1/4 cup chopped sun dried tomatoes

1/4 cup chopped roasted red bell pepper

2 ounces crumbled feta

1/2 cup olive oil

2 tablespoons red wine vinegar

1/4 teaspoon dried oregano

1 tablespoon honey

1/4 teaspoon red pepper flakes

1/4 teaspoon salt

1/4 teaspoon pepper

In a large bowl combine beans, roasted red pepper, sun dried tomatoes, basil, cilantro, parsley, and feta.   In another small bowl whisk together olive oil, garlic, red wine vinegar, dried oregano, honey, crushed red pepper, and salt + pepper.  Pour the dressing over the bean mixture.  Cover and let this sit and marinate 30 minutes to an hour.

Complete Eye Cream

I use eye cream both day and night.  Since my skin is dry I like to moisturize under my eyes to prevent my make-up from caking up.  This eye cream helps diminish dark eye circles and puffiness.
