Corn Fritters + Lump Crab Salad | What I Ordered From Shopbop

This has probably been my requested recipe so far!  After I posted this on instagram I had so many requests to share this recipe.  I was inspired to make this dish by my fellow blogger friend Beth over at Seersucker and Saddles.  She is always posting yummy recipes.   I used fresh corn for the fritters but if you can’t find that I think frozen or canned corn would work fine.  This was such a light and tasty dinner.  I will totally make it again!  If you make this ahead of time wait to add the avocado to the salad right before serving.  The spicy mayo on top of the fritters really adds some awesome flavor.  I think this is a dish that will be even better in the Summer with super fresh produce.  If you don’t like crab I think this could also be really good with sauteed shrimp.  Enjoy!

C O R N   F R I T T E R S  +  L U M B  C R A B  S A L A D 

Corn Fritters

4 ears corn shucked

1/2 red onion diced finely

1/2 green bell pepper diced finely

2 tablespoons parsley

2 eggs

3/4 cup all purpose flour

salt and pepper

Mix all together in a bowl.  Shape into patties and then put in the fridge to sit about 20-30 minutes to firm up.    In a skillet heat 2 tablespoons olive or canola oil.  Lightly fry the corn fritters about 3-4 minutes per side or until crispy.

Lump Crab Salad

1 8oz jar lump crab meat

1 jalapeno finely diced

handful cherry tomatoes, quartered

3-4 green onions sliced thinly

1 avocado diced

1 teaspoon cayenne pepper

1 teaspoon hot sauce (I used Texas Pete)

2 tablespoons parsley

juice of 1 lime

1 tablespoon olive oil

salt and pepper to taste

Mix all together in a bowl.

To Assemble.  Toss Arugula with your favorite dressing or just use olive oil and lemon juice.  We used Garlic Expressions dressing.  Then layer two corn fritter on top and place a scoop of spicy may0 (just mayo + siriracha mixed together).  Then top with the fresh lump crab salad.
