Arugula + Roasted Tomato and Burrata Salad | 2 New Cookbooks I am Loving

Meet your new favorite Summer Salad.   This salad combines everything I love.  It is basically like a glorified cheese platter over arugula.    Burrata is one of my favorite cheeses.  It is like mozzarella but creamier and so good.  I usually buy mine at Trader Joe’s but every now and then Harris Teeter carries it as well.  Roasting the tomatoes brings out so much flavor.  The creamy burrata, salty prosciutto, peppery arugula and sweet cherry tomatoes are such a good combo!   Ben and I had this for dinner the other night with a charcuterie plate and it was honestly my favorite meal ever.  Enjoy!

A R G U L U A   S A L A D + R O A S T E D  T O M A T O E S  A N D  B U R R A T A  

several handfuls arugula

1 pint cherry tomatoes, halved

1 cup tiny mozzarella balls

8 slices prosciutto

2 balls burrata

1/4 cup pesto

2 tablespoons olive oil

garlic expressions dressing or your favorite olive oil based dressing.

Prehaet oven to 350 degrees.  Toss halved tomatoes with olive oil and salt and pepper.  Arrange on a baking sheet and bake about 25-30 minutes until tomatoes are juicy and start to brown.

In a bowl toss arugula with dressing- I love Garlic Expressions but any sort of balsamic or red wine vinegar dressing will work.  Top the arugula with the roasted tomatoes and mozzarella balls.  Place the burrata balls right in the middle and kind of tear them open.  Tear the prosciutto into small pieces and scatter over the salad.  Drizzle all with pesto.

I wanted to share 2 new cookbooks worth checking out.

I have been a huge fan of Gaby for years.  I read her blog and stalk her instagram daily.   She has a true talent and is such a delight to follow.   I love that her recipes are relatively easy and full of light and fresh ingredients.  This is a beautiful cookbook.  I tagged so many recipes I can’t wait to make.

What’s Gaby Cooking

This cookbook has so many great healthy recipes.  It also has some DIY Beauty ideas like homemade face masks.  There is a chapter on cocktails and party menu ideas.  It really is so inspiring.  The pictures are gorgeous- not gonna lie I like a pretty cookbook that has pictures with each recipe and this is just that.
