Seems to me that you guys love pasta salad as much as I do! Pasta salad recipes are always my most requested!! We made this one over the weekend and it was not only super simple to make but also so delicious. I have enjoyed the leftovers for lunch the last few days! It is the perfect salad for a Summer picnic. I love all things Greek so I made mine with a Greek spin but you could easily use any veggie combo you wanted. You also could make your own dressing or use any store bought Greek dressing to keep things simple. I used Garlic Expressions my favorite dressing, I use it on everything. If you have never tried it, it is a must. Enjoy!
G R E E K T O R T E L L I N I P A S T A S A L A D
1 large container cheese tortellini or 2 smaller ones
1 pint cherry tomatoes halved
1 english cucumber diced
1/2 red onion thinly sliced
1 4oz jar marinated artichokes, drained and chopped
1 4oz container feta cheese crumbled
1 orange or yellow bell pepper diced
1/2 cup kalamata olives sliced in half
Garlic Expressions Dressing- I buy mine in bulk HERE I use it so much!
Cook tortellini according to package and set aside to cool. In a large bowl add cherry tomatoes, cucumber, bell pepper, red onion, artichokes and kalamata olives. Add in tortellini. Toss all together. Drizzle in dressing, add as little or as much as you like. Add in feta and chopped parsley and do a final toss. This is definitely best room temperature.

Have you been to Kairos in Mt. P? It is like a Greek version of Moe’s, but better. I am stoked they are opening one in West Ashley too. This salad looks fantastic!
