I had lots of requests to share the recipe for this veggie soup.  My mom made this last week and was telling me about it and I was like I have to make this.  It could not be easier to make you basically throw everything in your crockpot and let it cook for a few hours.  I had several questions about my crockpot- I have this ONE and love it.  The secret ingredient is V8 juice, it gives the soup great flavor.  My kids shockingly liked the soup too.  I was scared because of all the veggies they would shun it and they did at first but after they tried they really liked it (they did however cover theirs in Parmesan Cheese).  We served ours with garlic bread but my mom did cornbread and either is great side!  Enjoy!

L O A D E D  V E G G I E   S O U P 

1 bag frozen mixed veggies

1 bag frozen cut okra

1 bag frozen baby lima beans

4-5 small yellow potatoes diced

4 carrots diced

1 small onion diced

1-2 minced garlic cloves

handful fresh spinach chopped

1 quart beef broth (can also use veggie broth)

3 cans V8 Juice

1 tablespoon Worcestershire

1 Ranch Packet

1 tablespoon ketchup

a few dashes Texas Pete

salt and pepper

Parmesan cheese for topping

Add everything in crockpot and cook 4-6 hours.  I added the fresh spinach at the very end so it was still green and left it out of the kid’s soup.
