What I Eat For Lunch

Today I wanted to share some lunch ideas! I will be back with a new recipe next week just have not tried out any new recipes this week. Many of these are reusing leftovers and if it is one of my old recipes you can just click on the name and it will take to the actual recipe!

Kale + Shaved Brussels Salad | Leftover Taco Meat (I swear by this seasoning) | Whole Foods Pico de gallo | Whole Foods Guacamole | Plantain Chips

No Mayo Tuna Salad (recipe below) + GG Crackers (you can order HERE) + Cauliflower Hummus

1 can albacore Tuna, halved cherry tomatoes, diced red onion, capers. fresh basil, salt and pepper. Drizzle with olive oil and red wine vinegar.

Salami + Hummus + EBB Seasoning + Manchego Cheese + Cucumber roll ups | Whole Foods Quinoa Tabbouleh

Cottage Cheese with EBB Seasoning + Hard boiled egg with hot sauce + Kale Salad + Salami Cheese roll ups + Ithaca Chipotle hummus + Carrots and Cucumbers

Swiss Cheese + Turkey + Jalapeno Sauerkraut + Whole Grain Mustard |Pickled Cauliflower | Whole Foods Brussels Sprouts Salad

Greek Salad (kale+artichokes+cherry tomatoes+cucumber+yellow bell pepper+ feta + red onions + kalamata olives drizzled with olive oil and red wine vinegar) | Hummus

Sampler Plate | Fuji Apples + Salami + Jalsberg Cheese + Plantain Chips + Olives + Hummus

Farro Salad (see below) + Whole Foods Brussels Sprouts Salad + Hummus + cucumbers

Farro Salad | farro+ feta + arugula+ cherry tomatoes + cucumbers + red onion. Toss all with olive juice, lemon juice and garlic.

Swiss + Turkey + Ithaca Chipotle Hummus + EBB Seasoning + Kale Salad + Pickle

Egg Salad (two hard boiled eggs + a little mayo+ dash of mustard + dash whole grain mustard + salt and pepper and EBB Seasoning) | Kale + Brussels Salad + Heirloom Tomato

A few staples I keep on hand for lunches

Turkey (I always ask for it to be shaved and cut as thinly as possible

Hummus – I love Ithica Cold Pressed Chipotle Hummus, Cedar’s Orginal Hummus, Lantana Cauliflower Hummus, Lantana Green Chile Hummus

Sliced Cheese- I like swiss, smoked gouda, and provolone

Quinoa Tabbouleh, Brussels Sprouts Salad from the Whole Foods Salad Bar

Pickled Cauliflower from the Whole Foods salad bar.

Plantain Chips

GG Crackers

Lowfat Cottage cheese

Sardines- great with hot sauce and whole grain mustard

Kale, Arugula

Quinoa

Farro
