Greek Lentil Salad

I think lentils are highly underrated. I love them. They really fill you up and are so good for you! I love nothing more than a Greek salad so I tossed all my favorite Greek salad ingredients in with the lentils for my lunch this week. I always buy my lentils in a box at Trader Joe’s in the fridge section where veggies are. You can also buy them dried and cook them but trust me this is so much easier to buy them pre cooked. Just make sure you kind of break them up with a fork before you make the salad they get really packed in.

G R E E K L E N T I L. S A L A D

1 box lentils (I buy these at Trader Joe’s, you can also buy dried and cook yourself )

1 cup halved cherry tomatoes

2 baby cucumbers diced

1/2 red onion sliced

4 oz crumbled feta

1 green bell pepper diced

1/2 cup sun-dried tomatoes

1 cup marinated artichokes sliced thinly sliced

handful kalamata olives halved

D R E S S I N G

1/4 cup olive oil

juice of 1 large lemon

1 teaspoon dijon

1 tablespoon apple cider vinegar

1 garlic clove

2 teaspoons honey

1/2 teaspoon oregano

salt and pepper to taste.

Mix lentils and all ingredients.

in a jar shake or whisk together olive oil, dijon mustard, lemon juice, apple cider vinegar, garlic, honey, oregano and salt and pepper. Pour dressing over lentils and veggies and toss all together. This saves for several days in the fridge.
