My mom made this soup last weekend and it was amazing!! So hearty and full of flavor and healthy. It was a chilly weekend in Charlotte and I loved every minute of it. I love the cooler temps and putting on sweats and eating soup! This is so easy to make, you just toss it all in the crock pot and let it simmer. We served ours with cornbread, cheddar cheese, sour cream and hot sauce, but pile your toppings as you like! Enjoy!
M O M ‘S C H I C K E N S O U P
12 cups water mixed with 12 heaping teaspoons of better than boullion
1 cup dry rice (if you have leftover already cooked rice that is fine as well)
1 large white or red onion diced
4 stalks celery diced
5 carrots sliced
Sautee the white onion, celery, and carrots in 1 tablespoon butter til tender)
1 head broccoli, chopped
1 can white corn
2 cloves garlic
1 teaspoon oregano
1 teaspoon tyhme
3 tablespoons Worcestershire
1 small can cream of chicken soup or heavy cream
4 chicken breasts boiled and shredded
Combine all in a crock pot and cook 4-6 hours
Serve with sour cream and shredded sharp cheddar

Do you have to boil the chicken beforehand or can you put it in uncooked and shred afterwards?
We cooked it before!
you don’t have to cook the chicken before…..it will be more than cooked after 6 hours in crockpot

If you want to cook all day put on low if you want quicker do high!

This is so delicious! I made this tonight and my entire family loved it! I followed the recipe exactly except that I did not cook the chicken separately. I just shredded it right before we were ready to eat. Thanks for another great recipe! This is going to be part of our regular rotation.
