Kitchen Sink Whole Wheat Couscous with Lemon Vinaigrette

I love putting together salads with stuff I already have on hand. I think it is fun to come up with new combos and clean out the fridge. I always stock up on the Trader Joe’s whole what couscous. It is great to have for so many different salads. Cooks in 5 minutes and really tastes great with any veggies. I made this salad this week and devoured it yesterday for lunch and dinner. It is so yummy! If you want to make it a heartier meal add some grilled chicken or shrimp! Enjoy!

K I T C H E N S I N K W H O L E W H E A T C O U S C O U S

1 cup whole wheat couscous cooked according to box

handful cherry tomatoes halved

1 orange bell pepper diced

2 baby cucumbers diced

3-4 stalks hearts of palm sliced

handful pine nuts

1 small can sliced green olives drained

marinated artichoke hearts sliced thinly

pepperoni sliced into strips

feta cheese

1/4 cup olive oil

juice of 2 lemons

spoonful artichoke juice marinate

salt and pepper to taste

Cook couscous according to box. In a bowl assemble couscous and veggies and cheese. In a jar shake together olive oil, lemon juice and artichoke vinaigrette. Season with salt and pepper. Pour over couscous and veggies and toss to coat.
