Dinner Last Night | Caprese Chicken + Chopped Salad

I wanted share our dinner last night because it was legit good. Such a great low carb and healthy meal. The Caprese chicken was so yummy with the pesto and fresh mozzarella and both kids loved it so I consider that a win! It literally took no more than 10 minutes to make as well. I have been listening to lots of health podcasts and so many of them talk about asparagus and leafy greens and how good they are for you. This salad has both and is filled with so many veggies. A winning meal all around! Enjoy!

C A P R E S E C H I C K E N

4 chicken breasts

garlic expressions dressing

Pesto (I love Gotham brand )

tomatoes sliced

fresh mozzarella ball

basil

grated parmesan cheese

Trim chicken breasts of all fat. I also trim mine to make them roughly the same size so they cook evenly. Place in a baking dish and season with salt and pepper. Pour garlic expressions over chicken enough to cover bottom of dish. Spread a layer of pesto on each breast. Top with tomato slice, and fresh mozzarella. Bake at 350 degrees about 25 mins. Remove and sprinkle basil and parmesan cheese. Put back in the oven for another 5-10 minutes. Cooking time will vary based on size of chicken.

C H O P P E D S A L A D

I head of kale shredded

cherry tomatoes halved

orange bell pepper diced

pickled red onions (I get these at Whole Foods Salad bar)

pine nuts

asparagus cut into 1 inch pieces and blanched for a minute

Place all in bowl. I like to serve with Simply Dressed Lemon Vinaigrette
